Choosing stone
Quartz or quartzite: one letter, two different products.
These two get mixed up more than any other pair in our yard, and it is not the customer's fault. The names are one letter apart, both slabs are often white with gray movement, and both get sold as the practical alternative to marble. They have almost nothing in common. One came out of the ground and one came out of a factory, and every practical difference between them follows from that.
What each one actually is
Quartzite is a rock. It starts as quartz-rich sandstone, and heat and pressure inside the Earth recrystallize the grains until they interlock. The result is a stone made almost entirely of quartz, about 7 on the Mohs hardness scale. The geologist's test for whether a slab is true quartzite is that it breaks through the grains rather than around them, which is what separates it from the sandstone it used to be.
Engineered quartz is a manufactured product. Ground quartz is combined with polymer resins, pigments and adhesives, then pressed and cured into a slab. It is sold under brand names rather than variety names, which is your first clue: Cambria, Silestone and Caesarstone are manufacturers. Cristallo, Taj Mahal and Mont Blanc are quarry varieties.
That is the whole root of it. Everything below is a consequence.
Consistency is the real trade
An engineered quartz slab is designed to look like the sample. That is the point of manufacturing it. If you pick a color from a chip and order three slabs, the three slabs will match, the seams will be quiet, and the counter you get will be the counter you saw.
Quartzite is a variety, not a specification. Two slabs correctly labeled with the same name can look meaningfully different, because they came out of different blocks or different parts of the deposit. That is a feature if you want a surface nobody else has and a problem if you want predictability.
The practical consequence is how you buy them. With engineered quartz you are choosing a product, and it is reasonable to do that from a sample. With quartzite you are choosing an object, and you should stand in front of it. Our slabs sit outside on Airport Road in daylight for exactly that reason, and if your kitchen takes two slabs, the time to find out how many are left in the bundle is before anybody cuts.
Sun and heat separate them completely
This is the difference that gets discovered late, and it is not subtle.
The resin that holds an engineered slab together is a polymer, and polymers react to ultraviolet light and to heat. Read a manufacturer's own warranty rather than a salesperson's summary. Cambria's is explicit: product installed outdoors, in partially covered or sheltered outdoor areas, in entryways, or in interior areas subject to traffic from outdoors is not covered, because exposure to weather, changing temperatures and sunlight can damage it.
Note how far that reaches. It is not only the outdoor kitchen. A sunroom counter, a bar top inside a wall of south-facing glass, a mudroom run by a door that stands open in July: all of those are places where an engineered slab may discolor unevenly, and the discoloration is permanent because it is a change in the resin rather than something sitting on the surface.
Quartzite has no resin in it. It is rock, it has been outside for most of its existence, and sunlight does nothing to it. For an outdoor kitchen, a pool surround, a sunroom or a fireplace surround, natural stone is the straightforward answer and engineered quartz is the one with the caveat.
The same logic applies to a hot pan. Quartz manufacturers all tell you to use a trivet, and they mean it, because the resin is the weak link even though the quartz in it is hard. Quartzite will not scorch. Neither material enjoys being used as a cutting board.
Where quartz is the better answer
None of the above makes engineered quartz the lesser product. It is the right call more often than people expect.
- A bathroom or laundry that needs to match something. Predictable color, predictable pattern, no surprises between the vanity and the tub deck.
- A rental, a flip or a spec house. Choosing from a catalog is genuinely faster, and nobody is walking a slab yard for a unit turnover.
- A kitchen where somebody wants zero maintenance. Engineered quartz is non-porous and does not want sealing. Quartzite usually does, and how often depends on the stone.
- A large or complicated run. Matching six engineered slabs is a purchase order. Matching six quartzite slabs is a hunt.
And where quartzite is: any surface in daylight, anything outdoors, a single dramatic island, and anywhere the point is that the piece is one of one.
The mislabeled slab problem, briefly
There is a third thing to know, and it belongs to quartzite alone. Some slabs sold as quartzite are not quartzite. Several popular white and gray varieties are dolomitic marble, which is much softer and etches with acid, and they get sold under the quartzite heading because the look is similar and the word sells better.
This matters enough that we gave it a section of its own in the quartzite versus granite piece, including the field test. Read that before you buy a quartzite you have not seen tested. Engineered quartz has the opposite problem and the opposite reassurance: you always know exactly what it is, because somebody made it.
One question to ask whoever fabricates it
Not about the material. About the shop.
Cutting either of these dry releases respirable crystalline silica, and the health risk is serious and well documented. The most useful thing about the joint OSHA and NIOSH hazard alert updated in February 2026 is that it corrects the assumption most people arrive with. It is not only engineered stone. The alert says the highest crystalline silica levels are associated with quartzite and with certain engineered stones. Engineered stone can run up to 95 percent crystalline silica, and granite up to 50 percent, while limestone and marble contain little or none. OSHA's permissible exposure limit is 50 micrograms per cubic meter as an eight hour average.
So the question is not which material is safer to own. A finished, cured countertop in your kitchen is not a silica hazard to you. The question is whether the shop cutting it is cutting wet and controlling dust, and it is a fair thing to ask, as we noted in our piece on who actually sells stone in Connecticut. A shop that answers it easily is telling you something about how it runs generally.

- Origin. Quartzite is quarried. Engineered quartz is manufactured.
- Consistency. Quartz matches the sample. Quartzite is one of one.
- Sunlight. Quartzite is unaffected. Engineered quartz is generally excluded from warranty coverage outdoors and in sun.
- Heat. Use a trivet on quartz. Quartzite does not scorch.
- Sealing. Quartz does not need it. Quartzite usually does, at an interval that depends on the stone.
- Acid. Both shrug it off, which is the one place they agree and where marble does not.
- How you buy it. Quartz from a sample. Quartzite in person, in daylight.
